Panipuri Ingredients: To make Panipuri first of all we will make puri so here are the ingredients Semolina(rava/sooji), Maida (all purpose flour), Baking Soda, Oil for frying, A small round shaped lid to cut puris. for making pani all you need is mint leaves, coriander leaves, black salt, green chilies chopped,ginger,lemon juice, Tamarind add as required and for stuffings take boil potato, all kinds of masalas, chilly etc.
Panipuri recipe: Take rava 1 cup and Maida (plain flour)-2 tbsp, Baking Soda 1 pinch, Salt 1/4th tbsp, Oil tsp and then mix well take water 1/4th cup knead Dough mix water if required soft dough give oil 1 tsp and again mix well then cover it for 20 mins knead Slightly take large ball sized roll thin and cut round and then do deep fry in oil stir occasionally for water take tamarind and all other ingredients mix well them in water for stuffings take 2 boiled sliced potato add masala green chilies chopped onions and mash them well.
for potato stuffings: 3 potato boiled, 1/2 onion chopped, 2 tbsp coriander, 1/2 tsp cumin powder,1/4 tsp pepper powder, 1/2 tsp Kashmiri powder, 1/2 tsp salt.
Different fillings f0r Panipuri : there are many types of fillings for pani puri the most famous is potato stuffings but we can use kala chana in the stuffings after soaking it. We can use meetha pani, teekha pani as well as both we can make water using pudina. For theeka Pani: 1/4 cup mint, 1/2 cup coriander, 1 inch of ginger, 2 chili, Small ball sized tamarind, 1 tsp chaat masala, 1 tsp cumin water, pinch hing, 3/4 tsp salt, 4 cup cold water.
for khatta meetha pani: 1 cup tamarind extract, 3 tbsp jaggery/ gud , 1 tsp chaat masala, 1/4 tsp pepper powder, 3/4 tsp salt, 3 cup cold water.
DIFFERENT STATES DIFFERENT NAMES:
1. In Bengal it is known as Puchka it is the king of variety of snacks. The filling is made by lightly mashing boiled potatoes with black salt and some spices.
2. In North India it is known as Gol Gappe it is made from a mix of potato and chutney and very tangy water. it contains dash of mints and lots of spices added to it.
3. In Gujarat it is known as Pakodi the water is heavy on mint and green chilies it is quite stuffed and spicy. one can enjoy having it.
4, Pani ke Patashe it is called in Haryana it is quite similar to gol gappa.
5. Gup chup is known in Odisha and South India it consist of boiled chickpeas or white peas and spicy water onions are not always added.
6. Tikki is known in Hoshangabad Madhya Pradesh they are yummy puris stuffed with potatoes or chickpeas dipped in tangy water.

Street Style Pani Puri Recipe: Main Ingredients for 12 puris 1 boiled potato, 1 Onion Chopped, 1/2 cup boiled chana, 3 cups water, 1/2 cup Boondi .
Condiments: 1/2 cup Mint Leaves, 3-4 cups coriander leaves,3 tbsp green chilies chopped, 3 tbsp ginger chopped, 1 tbsp imli Pulp.
Spices: 2 tsp cumin powder, 1 tsp Chaat Masala, 2 tsp Black Salt, 2 tsp red chilli powder, 1 tsp Chaat Masala.
A person serving Pani Puri would take tiny sized rounded pani puri and break it from center through the point of finger and stuff it with boiled chickpeas and fill spicy water. They will also put onion,mint,Tamarind,Chutney,Chat Masala,Potatoes,Chilies inside it. they are cheaply available to buy and eat.
